昨天原来想做的是个乳酪饼干，之前曾经做过，被同事大加赞扬。结果临动手的时候发觉原来方子里面需要的马苏里拉cheese和柠檬正好都没有了。心想，这要是遇到个德国人，肯定觉得怪抓瞎的，不过俺们中国人，勤劳善良不算，还兼具智慧。不是没有马苏里拉吗？那就加大cream cheese 的含量，没有柠檬，可咱有同样属于柑桔类的sunkiss橙子，加柠檬皮的功效不就是为了增香嘛，这sunkiss的橙皮也是香得不行呢。
于是，理论联系实践，动手操作，发觉出来的效果非常之好，忍不住让人一吃再吃。
另外，这个方子的cheese和奶油不需要打发，如果家里有烤箱但还没有打蛋器的tx可以很方便的试试看。关于糖的问题，我没有标明分量，因为每个人对于甜度的需求不同，所以根据喜好放就好，觉得不必要死抠配方。
上方子：
cream cheese 220g
butter 125g
糖 适量
盐 1/4小匙
低筋面粉 300g
玉米淀粉 20g
奶粉 20g
小苏打 1/4小匙
做法：
将cream cheese用橡皮刮刀刮拌至绵软无颗粒，加入糖（我用粉碎机打了一下白砂糖，变成糖粉，这样刮拌的时候很容易两者相容），拌至光滑后，加入融化的黄油，再次拌匀，然后就加入配方中的后四样（推荐先量好分量，然后筛一遍，这样一方面保证粉类里面没有大颗粒，一方面小苏打之类的可以分布均匀，不会只是一坨一坨的），用刮刀和cheese butter 的混合物拌匀，然后……
然后就是成型，入烤箱，我自己是放下层180度上下火5分钟，然后换上火7分钟。各位可以自己尝试并琢磨出个适合的温度。
这里要讲一下成型的问题。
我的做法，是将和好的面团擀成长条，然后包入保鲜袋入冰箱冷藏，至少2小时，然后拿出来用刀切片，入烤箱烤。但还可以：
1、将面团擀成薄片，放保鲜袋入冰箱冷藏后，拿出来，用饼干模子整造型后去烤；
2、直接将面团揪小块来揉捏成小团后，按扁，入烤箱烤。
味道都是一样的，只是最后出来的造型不同，看各人爱好而已。
